My absolute favorite canon is how nanoha and fate (from magical girl lyrical nanoha) has a grow up, and you can see them as adult, These two have been together since the beginning but in the 1st season they're more of enemies where they become friend at the end.

In the season two you can see them develop a lot of care for each other and how strong they are if they pair up together which is often.

In the 3rd season, The show set in a time when they're already grown up which already made me like it a lot because 'holy shit my girls grow up omg look at them'  And then the show featured two of them living in the same house, sleep in the same bed, adopting daughter name Vivio together which their daughter called them both mama. 3rd season also heavily featured plot about their daughter and how nanoha take care of Vivio. I enjoy it a lot, like a lot not to mentioned that there's also moment of fate helping nanoha taking care of Vivio. I can't explain, but it's such a satisfying thing to see.

While they don't considered nanoha and fate lesbian canonically but.... come on x'D 
In any case, I find it's satisfying to watch how these two relationships develop. Doesn't matter if it is romantic or Platonic.

Speaking of satisfying stuff to watch. Akane Tsunemori character development from Psycho-pass. Especially season 1

Her introduction and her look doesn't really catch my eyes or interests, She seems like just an innocent idealist do-gooder which I tend to normally dislike but oh my god once the show pick up, I couldn't stop watching. And as the show goes on, I started to like her a lot. Like A LOT. 

One episode that she's hesitate to kill the season 1 villain because of what she believed result in her losing her friend life. Instead of her character develop in a way similar to fallen hero or get her idealistic self destroy, SHE FUCKING STRENGTHENS HER RESOLVE, she adapted and learn from and not letting her ideal and sense of justice goes. And it's not done in a way that is a careless way or 'thinking of friendship empower me'.

I can't explain it but by the half of season 1, She quickly becomes my favorite character of not only the show itself but my favorite character of all media that I have watch. I can't explain why but seeing a character like her, I fall HARD for her x'D

Seeing grow from newbie shy and naïve officer to Idealistic headstrong but realistic, compassionate but firm. Soft but mentally strong... is just really make me happy. I really like this type of character or person, lol
